This is a light refreshing desert with a cheese cake like taste. Quick and easy to prepare and only 65 calories per serving.
Fake Cheese Cake
1 four serving size sugar free lime or lemon jello
1 cup boiling water
1 cup 1% cottage cheese
Mix jello in 1 cup boiling water. Allow to cool to room temperature.
When jello is cool place in blender with cottage cheese. Blend until smooth.
Pour into 4 dessert dishes.

Crustless Spinach Quiche
This makes a nice dinner served with a green salad. Left overs keep well and taste even better the next day.
Makes 6 portions
1 tsp butter
1 300 gram pkg. frozen chopped spinach
1 cup 1% cottage cheese
2/3 cup shredded mozzarella cheese
1/2 cup freshly grated Parmesan cheese
1/2 cup skim milk
2 eggs
1/3 cup whole wheat flour
1 tsp baking powder
1 tsp dried sweet basil
1/4 tsp nutmeg
1/2 tsp salt
Pinch freshly ground black pepper
Makes 6 portions

- Grease a 9 inch pie plate with butter
- In a bowl, combine spinach, onion, cottage cheese, mozzarella and Parmesan cheeses.
- In a blender, combine milk, eggs, flour, baking powder, basil, nutmeg, salt and pepper. Blend at high speed until thoroughly blended.
- Pour egg mixture over vegetable mixture; mix well. Pour into prepared pie plate.
- Bake at 350 degrees for 45 minutes or until knife inserted in centre of the pie comes out clean. Let stand for 5 minutes before serving.
